Sausages in pesto and tomato sauce

I like easy meals which also taste yummy!  The ingredients for this one are probably in many peoples fridge already and even if it takes just under an hour to make it is not very demanding, and you can easily make it with your child playing with play dough in their high chair 🙂

This dish actually came about one night when I wanted to make pasta and meat balls, but did not have any meatballs so decided to use sausages cut into pieces instead. I then saw pesto in my fridge and really fancied it, so I put it in.  Why I put butter beans in I can’t really remember, but I really like it.  If you are not a butter bean fan then you don’t have to add them and you can also use any sausages you like.

 

Ingredients

Cooking spray (fry light)

1 red onion

12 sausages.  I use apple and pork sausages.

1/2 green pepper

1/2 red pepper

2 cans of chopped tomatoes

1 can of butter beans

splash of olive oil or vegetable oil

1 tbs of tomato pure

2 heaped tbs of pesto

Season to taste

Method

Chop the onions and peppers into pieces.  Spray the pan with a cooking spray (fry light) or use a tbsp of olive oil. I used spray and later run out of it so used oil for the sausages.  Fry the onions and peppers for about 7 minutes, until they are soft.  Whilst frying the vegetables cut the sausages into pieces.  I used my favourite sausages, and I think that you can do the same, just pick any that you love!

Add a splash of olive oil to the vegetable pan and fry the sausage pieces until they are cooked all the way through (about 10-15 min).  You then stir in the chopped tomatoes and the tomato pure.  Drain the butterbeans and add then to the pan. Let the dish simmer for about 20 minutes and then add the pesto.

The dish can be served with roasted vegetables, mashed potato or pasta.

We are big fans of cooking spray, so big that I ran out halfway through this recipe and had to use olive oil.

Fry the red onions and peppers for about 7 minutes until they are soft and your kitchen smells lovely.

All the ingredients for this recipe were from Lidl and Aldi.

These are my number 1 favourite sausages and I love using them in my recipes.  I also think that a tomato and basil sausage or simply plain port sausages or even Quorn sausages would go really well.

 

Add the sausage pieces to the pan and fry them well for about 15 minutes.

Then the butter beans, which I am also a big fan of.  JJ really likes them too, so that is a bonus.

I would eat anything with pesto!

Done!  When I see a picture of it, I am not sure that it looks as good as it tastes.

This was JJ’s dinner that night.  He likes to have some plain spaghetti on the side which he usually eats with his fingers.  I should have taken a picture of the plate after, but I guess that I was too busy tidying up 😉
